• tasty
• well balanced
• made in about half an hour!
• perfect for batch cooking and freezing for a handy lunch to take to work
• and made with lentils which are a good source of fibre and protein, and should help to keep you nice and full… although I usually have mine with wheaten, a slice of bread or a few crackers!
This soup will work great with the Traditional Northern Irish Wheaten Bread Recipe published last weekend!

JILL’S BACON & LENTIL SOUP
Ingredients
10-12 rashers back bacon, fat trimmed off
Spray veg oil
2 medium onions, finely chopped
2 carrots, finely chopped
1 red pepper, diced
200g red lentils, rinsed
1 x 400g can chopped tomatoes
1200ml chicken stock (I used 3 stock cubes)
1 tsp onion granules
1 bay leaf
Black pepper to taste
Instructions
1. Spray a large saucepan with oil over a medium-high heat. 2. Add the bacon and cook for about 3-4 minutes until browned, then add the onion, carrot and pepper and cook for a further 5 minutes until softened.
3. Add the chicken stock, rinsed lentils, chopped tomatoes, onion granules and bay leaf.
4. Bring to the boil, then reduce the heat and simmer for around 20 minutes until the lentils are soft.
5. Blend with a hand blender until smooth. If too thick at this point, add a splash more boiling water.
6. Season well with black pepper. Then serve and enjoy!
