These are super easy to make - you don’t even need scales so they’re perfect to make with kids or just to make life easy! Seriously though, they are the best pancakes and you have to try them!
Some top tips:
• Normal self raising flour will not work for this recipe. The buttermilk needs the bicarb of soda for a chemical reaction to make the pancakes puff up... there’s science behind the perfect pancake! If you only have normal self raising flour, add about a tsp of bicarb of soda.
• If you can’t get the hold of buttermilk, you can use normal milk and 1 tbsp lemon juice or white wine vinegar.
• Don’t skip sifting your flour.
• The batter needs to be really thick for the ultimate pancake! Don’t add too much milk.
• Use a non-stick pan or griddle - you will have a mess on your hands if you don’t!
• You want to just lightly grease your pan/griddle - too much oil and the pancakes will fry which you don’t want.
• Cook in batches setting the cooked ones on a cooling rack and cover with a clean tea towel to keep them warm.

INGREDIENTS…
This will make around 8-10 large pancakes
9 heaped tbsp soda bread self raising flour
4 tbsp caster sugar
3 eggs
280ml (1/2 pt) buttermilk
INSTRUCTIONS…
• Sieve the flour into a large bowl. Add the sugar and combine.
• Add the eggs and buttermilk and mix until it forms a thick batter. You might not need all of the buttermilk - this batter should be really thick to make the pancakes fluffy!
• Lightly grease a griddle or pan with spread or butter. Ladle on the mixture depending how big you want your pancakes!
• Cook over a medium heat for a couple of minutes until there are plenty of bubbles, then flip and cook on the other side.
If you are using a pan, make sure it is non-stick! Serve with whatever yummy toppings you
