The delicious Guinness Chocolate Cake is the perfect weekend bake!
This is one of my all-time favourite cakes, it’s so rich, moist and delicious - every time I make it I’m reminded how much I love it! And Baileys icing is the best thing ever so if you have some of the tipple in the house for Christmas, try this recipe!

INGREDIENTS…
Serves 10-12
250ml Guinness
250g unsalted butter
75g cocoa powder
300g caster sugar
100g light soft brown sugar
150ml sour cream
2 large eggs
1 and 1/2 tbsp vanilla extract
275g plain flour
2½ tsp bicarbonate of soda
For the icing:
330g cream cheese (2x165g tubs)
175g icing sugar
2 tsp cornflour
125ml double cream
2-3 tbsp Baileys (optional)
INSTRUCTIONS…
Preheat the oven to 160 degrees fan. Grease and line a 9 inch springform tin.
Pour the Guinness into a large wide saucepan and add the butter. Heat until the butter is melted, then whisk in the cocoa and sugars with a balloon whisk.
In another bowl, beat the sour cream with the eggs and vanilla extract and then pour into the pan. Next sieve in the flour and bicarb and whisk.
Pour into the tin and bake for 45-60 mins until a skewer comes out clean. Leave to cool completely in the tin on a cooling rack.
For the icing: whip the cream cheese until smooth, sieve over the icing sugar and cornflour and then beat to combine using a hand mixer.
In another bowl, whip the double cream until fairly thick. Add the whipped cream and Baileys into the cream cheese and fold through gently.
Spread the icing on top of the cake and serve. Will keep for 1-2 days in the fridge - just let it come to room temperature before serving.
