Jill Bakes the Alphabet | ‘F’ is for Fifteens… with Maltesers

A traditional Northern Irish traybake for ‘F’… but I’ve made them with a twist using Maltesers instead of glacé cherries.


In my opinion, one of the best traybakes!


For me, a good fifteen is gooey so using slightly more condensed milk than the usual recipe helps with this!

INGREDIENTS…

Makes 12


15 digestive biscuits

15 marshmallows, half left whole and half cut into quarters

15 Maltesers (you can use glacé cherries instead for a more traditional Northern Irish fifteen)

225ml condensed milk just over half a tin)

Desiccated coconut


INSTRUCTIONS…


Put the biscuits in a large food bag and smash with a rolling pin until they are really fine crumbs with no chunks of biscuit.


In a large bowl mix together the crushed biscuits, marshmallows and Maltesers.


Then add in the condensed milk. Mix to combine. The mixture should be fairly sticky as this is what makes a nice gooey fifteen.


Line a 9x13 inch baking tray with baking paper. Spoon in the mixture and spread with a spatula. Sprinkle with more coconut.


OR


Lay out a large sheet of cling film and sprinkle with the coconut. Add the mixture on top and shape into a log about 30cm long. Wrap the cling film tightly around, twisting the ends together.


Chill in the fridge for 3-4 hours or overnight and then cut into slices.


Will keep for about a week in an airtight container.
