Jill Bakes The Alphabet | ‘D’ is for Double Chocolate Muffins

These are so delicious and are so simple to make - you don't even need a mixer!

INGREDIENTS…

Makes 12 large muffins


250g plain flour

200g caster sugar

35g cocoa powder

1 tsp bicarbonate of soda

1 tsp baking powder

1/2 tsp salt

200g milk chocolate chips/chunks

100g white chocolate chips/chunks

2 large eggs

185g sour cream

120ml vegetable oil

120ml milk

2 tsp vanilla extract



INSTRUCTIONS…


Preheat oven to 180 degrees fan. Set 12 muffin liners into a muffin tray.


Sieve the flour, sugar, cocoa powder, baking soda, baking powder and salt into a large bowl. Add the chocolate chips and combine. Set aside for now.


In another large bowl, add the eggs, sour cream, oil, milk, and vanilla extract. Whisk with a balloon whisk until just combined.


Pour the sour cream mixture into the dry ingredients and fold together with a silicone spatula until just combined. The batter will be thick but don't overmix.


Spoon the mixture into the liners, filling them all the way to the top. Bake for 20 minutes until well risen and a skewer comes out clean.


Cool muffins for 10-15 minutes in the tray, then transfer to a wire rack to cool.


Muffins will keep in an airtight tin for about 5-7 days.
