Did you ever see a fudgier brownie?! Swirled with salted caramel to make them even more delicious.

INGREDIENTS…
Makes 16 brownies
150g 70% dark chocolate
50g milk chocolate
200g unsalted butter
3 large eggs
275g caster sugar
95g plain flour
30g cocoa powder
100g milk chocolate chips, or chocolate chopped up into small pieces
1 tin Carnations caramel
1 tsp sea salt
INSTRUCTIONS…
Preheat oven to 160 degrees fan and line a 9x9 baking tray with baking paper.
Melt together the butter, dark and milk chocolate in a heatproof bowl in the microwave for 1-2 mins until melted. Leave to the side to cool to room temp.
Using a hand or stand mixer, whisk together the eggs & caster sugar for a few mins until pale, moussey, and doubled in volume. It's done when you lift the whisk up and it leaves a trail for a couple of seconds before disappearing.
When whisked, pour the cooled chocolate mix over the eggs and fold together carefully with a spatula. Be patient so you don't knock out the air!
Once combined, sift the cocoa powder & plain flour on top of the chocolate mixture and fold together gently. Fold through the choc chips.
Mix the salt into the caramel.
Pour half the brownie batter into the prepared tin and pour over half the salted caramel. Dollop over the rest of the brownie mixture making sure all the caramel is covered.
Add a quarter of the remaining caramel and swirl into the brownie mixture with a skewer. Leave the rest to drizzle over the cooked brownies.
Bake in the oven for 24-28 minutes. They're done when they're not wobbling when you shake the tin, and a skewer should come out mostly clean.
Leave to cool in the tin completely. Drizzle over the rest of the caramel and put into the fridge overnight.
Use a hot knife to cut the brownies for a nice clean cut. I cut into 16 pieces.
Will last in an airtight container for about a week
