This has been a much requested recipe since I posted it on my meal plan on Instagram a couple of weeks ago.
This version is super speedy with a few cheats to make it the perfect dinner for busy lives!
SPEEDY 15 MINUTE CHICKEN FRIED RICE FAKESWAY

Ingredients
(Serves 4)
• 3 chicken fillets, in chunks
• 2 packets microwaveable basmati rice or cooked, cooled rice
• Veg oil spray
• 2 peppers, thinly sliced
• 1 punnet mushrooms, sliced
• 1 bunch spring onions, chopped (you can use white or red onion instead)
• Frozen peas (couple of handfuls)
• 3 eggs, beaten in a bowl and seasoned with black pepper
• 3 tbsp dark soy sauce
• 3 tbsp light soy sauce
Instructions
1. Spray a large non-stick pan with veg oil spray and add the chicken. Cook over a high heat for 2-3 minutes on each side until browned and cooked through. Meanwhile prepare the veg.
2. Once cooked remove the chicken from the pan. Add all the veg and cook for 5-6 minutes until softened. Add a splash of water to stop sticking if needed.
3. Push all the veg to one side of the pan, add the beaten egg to the other side stirring constantly with a wooden spoon. You’ll see the egg start to cook. Once almost cooked add the rice and cooked chicken back in and mix together.
4. Cook for a further few minutes until the egg is fully cooked and the rice is piping hot.
5. Add the soy sauce and mix well. That’s it! I love it served with some Mayflower curry sauce.
It also heats up great the next day for lunch (make sure it’s piping hot and eat within 24hrs.
