Slow Cooker Traditional Chicken and Veg Soup

240 calories, and 26g protein per serving


I’ve never had as many requests for a recipe as when I posted this on my stories over the weekend!


Lots of you had been asking for a super-simple, tasty and filling vegetable soup. I’ve added chicken to up the protein and it’s so juicy and just falls apart.


Perfect for a week of easy lunches! This took me just 2 minutes 37 seconds to bung everything into the slow cooker!



You could also cook this in a saucepan if you don’t have a slow cooker - I imagine about an hour would do it, just check the chicken is cooked.

INGREDIENTS…

Serves 5-6


4 chicken fillets

About 800g chopped soup mix (carrot/leek/celery) - I use Barr's pre-prepared mix)

125g dried soup mix

4 chicken stock pots dissolved in 1.5

litres boiling water

1 bay leaf

1/4 tsp dried thyme

1 tsp Worcestershire sauce

Salt and black pepper



INSTRUCTIONS…


Add everything into the slow cooker.


Cook for 3-4 hours on high or 5-6 hours on low.


When cooked, shred the chicken with two forks.


Remove the bay leaf. Serve and enjoy!
