Back with an easy prep, healthy slow cooker recipe!
It was extremely hard to make this look nice, but I promise you this is so tasty!
Leftovers freeze really well so perfect for batch cooking.

INGREDIENTS…
Serves 4
4 chicken breasts
2 onions, in large chunks
2 tsp ginger purée
150g crunchy peanut butter
1 chicken stock pot (not dissolved in any water)
3 tsp mild or medium curry powder
1/2 tsp chilli powder (optional)
1 tsp smoked sweet paprika
1 tbsp brown sugar or honey
1 tbsp light soy sauce
1 tbsp dark soy sauce
400g tin full fat coconut milk
Salt and black pepper
2 peppers, sliced
1-2 limes, juice only

INSTRUCTIONS…
Put all the ingredients except the peppers and lime juice into your slow cooker.
Stir well and cook on high for 3-4 hours or low for 6-7 hours.
30 minutes before the end of the cooking time, add in the peppers and stir through.
Finish cooking.
Shred the chicken with two forks or leave chunky if you prefer. Add in the lime juice just before serving.
Serve with rice or chips for a perfect fakeaway!
