Jill Bakes | Slow Cooker Creamy Chicken Orzo

Lots of you requested more healthy slow cooker recipes! The flavours of this one are based off my one-pan ‘Marry Me’ chicken pasta recipe which was my most popular last year! This dinner is so tasty, quick and easy to prep - I think it’ll be a real winner!


Any leftovers can be stored in the fridge for a few days and heated up - if it looks a bit dry, add a splash of milk or spoonful of leftover creme fraiche and a small amount of boiling water to make it nice and creamy again! It also freezes well.

INGREDIENTS…

500 calories, 45g protein per serving

Serves 4


4 chicken fillets, in large chunks

10 sun-dried tomatoes, chopped finely

1 onion, diced

1 tsp smoked sweet paprika

1 tsp onion or garlic granules

1/2 tsp dried oregano

1 tsp dried thyme

Black pepper and salt

2 chicken stock pots dissolved in 700ml

boiling water

250g orzo

250g mushrooms, sliced

2 peppers, sliced

4 heaped tosp reduced fat creme fraiche



INSTRUCTIONS…


Add everything into the slow cooker except the peppers, mushrooms, orzo and creme fraiche.


Cook for 3-4 hours on high or 6-8 on low.


Add the peppers, mushrooms and orzo about 45 minutes before the end of the cooking time. Give it a stir and put the lid back on.


Check the orzo is cooked. If it's still a little hard, add a splash more boiling water and let it cook a little longer.


Stir through the creme fraiche 5 minutes before the end of cooking. Serve and enjoy.
