It feels like autumn and slow cooker season has arrived. Super easy, minimal prep and maximum taste!
You can customise how hot this is by adding more or less curry paste/powder.

INGREDIENTS…
Serves 4
4 chicken fillets (cut in small chunks)
1 onion, diced
1 heaped tbsp plain flour
3 tbsp tikka paste or tikka curry powder
2 tbsp tomato purée
2 tsp ginger purée
1 chicken stock pot
400g tin chopped tomatoes or passata
2 peppers, sliced Salt and pepper
To finish:
3 tosp mango chutney
3 heaped top reduced fat creme fraiche / greek yoghurt or 100ml double cream
INSTRUCTIONS…
Put all the ingredients (except the peppers) into the slow cooker and mix well. Put the lid on and cook on high for 2 hours or low for 4-5 hours.
Add the peppers and cook for a further 1 hour.
After this time, stir in the mango chutney and creme fraiche and serve with rice.
