One-Tray Sausage, Apple & Potato Traybake

An updated version of one of my favourite dinners... doesn’t look like much but I make this a couple of times a month I love it so much and there is literally just the chopping board and one tray to wash up!

INGREDIENTS…

Serves 4-5


Spray veg oil

1kg baby potatoes (cut in half if larger ones

24 cocktail sausages or 8 lean pork sausages (you could also use veggie ones

3 carrots, peeled and cut into chunks

2 peppers, in large chunks

2 red onions, in wedges

2 green eating apples, in chunks

1 chicken stock cube dissolved in 200ml

boiling water

1 tsp smoked sweet paprika

1/2 tsp dried thyme

Black pepper

INSTRUCTIONS…


Preheat oven to 180 degrees fan.


Add all the ingredients except the chicken stock into a large oven tray and spray with the oil. Toss around until covered.


Cook in the oven for 25-30 minutes.


Make up the chicken stock and pour over the tray.


Return to the oven for another 25-30 minutes until the sausages are cooked and the veg are soft.
