Do you love one-pan meals that are super tasty with minimal prep and just one tray to wash up?! This one’s for you!
I’ve had a number of requests for gluten and/or dairy free recipes and this one ticks the box for both (just make sure to check the labels of the sausages and stock cubes).
You could also use veggie sausages to make this a great meat-free option!

County Antrim Foodie and Instagrammer
INGREDIENTS…
Serves 3-4
Spray veg oil
2 red onions, in wedges
3 red or yellow peppers, in chunks
200g baby plum or cherry tomatoes
1/2 tsp dried thyme
1 kg baby potatoes
8-10 pork sausages
1 tsp onion granules
1 tsp smoked sweet paprika
1/2 a chicken stock cube dissolved in 100ml boiling water
Black pepper, to season
INSTRUCTIONS…
1. Preheat the oven to 200 degrees fan.
2. Prep all the veg. Prick the sausages with a fork. Add to the tray.
3. Spray with oil and add the herbs/spices - stir to coat everything. Cook for 30 minutes.
4. After this time stir everything gently and turn the sausages. Add the stock. Cook for a further 20 mins.
Serve and enjoy. Dinner doesn't get much easier than that!
