Ingredients
Serves 4
Veg oil spray
3 chicken breasts, in small chunks
1 red onion, diced
2 peppers, diced
1/2 punnet mushrooms, sliced
2 tsp smoked sweet paprika
1 tsp thyme
1 tsp onion granules
1 tsp BBQ seasoning
Black pepper
350g dried pasta
500g tomato passata
600ml chicken stock (2 stock cubes)
30g grated cheese
2-3 tbsp reduced fat creme fraiche
Instructions
1. Spray a large non-stick pan with veg oil spray. Cook the chicken for about 2-3 minutes on each side over a high heat until brown. Remove from the pan.
2. Add the onion and cook for 5 minutes until softened. Then add the peppers mushrooms and cook for a further 2-3 minutes. Add a tiny splash of boiling water to help speed this up.
3. Then add the dried pasta, passata, chicken stock, onion granules, paprika, thyme, BBQ seasoning and the cooked chicken. Bring to the boil and then reduce to a simmer. Cook with a lid on until the pasta is soft - about 20-25 minutes depending on the pasta chosen.
4. When cooked, add the grated cheese and creme fraiche and warm through. Season with pepper.
5. Serve with crusty rolls or garlic bread and enjoy!
