One-Pan Honey Chilli Chicken Rice

Super tasty, quick to make and only one pan to wash up - what’s not to love?!

INGREDIENTS…

Serves 4


Spray veg oil

4 chicken fillets, in strips

1 red onion, finely sliced

10-12 mushrooms, sliced

2 peppers, sliced

4 tbsp honey

4 tosp sweet chilli sauce

2 tbsp light soy sauce

2 tbsp dark soy sauce

1 tsp Worcestershire sauce

2 pouches microwavable rice

Salt and pepper



One-Pan Honey Chilli Chicken Rice

INSTRUCTIONS…


Spray a large non-stick pan with veg oil. Add the chicken and cook for 2-3 minutes on each side over a medium-high heat until golden. Remove from the pan and set aside.


Add a splash of water into the pan.

Add the onion, peppers and mushrooms and cook for 4-5 minutes.


Add the chicken back into the pan.

Add all the sauces and simmer until it starts to thicken slightly. Add the rice, stir well to coat in the sauce and cook for about 4-5 minutes stirring regularly until the rice is piping hot. Serve and enjoy!
