This is a really tasty pasta made in just over half an hour and only one pan to wash as the pasta is cooked in with the sauce! You just have to try it!!

INGREDIENTS…
Serves 4
Veg oil spray
1 onion, diced finely
2 peppers, sliced
10 mushrooms, sliced
3 chicken fillets, chopped
Chicken stock 550-600ml (I used 1 and 1/2
stock cubes)
400g tomato passata
1 tbsp tomato purée
1 tsp onion granules
1 tsp sugar
125g reduced fat creme fraiche
300g penne pasta
100g grated mozzarella or cheddar
Onion salt and pepper to taste
INSTRUCTIONS…
Heat a large frying pan over a medium-high heat. Add the chorizo to the dry pan and cook for 2-3 minutes until it crisps up and the oils release into the pan. Then remove from the pan and set aside.
Add the chopped onion to the pan and cook for 5 minutes. Then add the chopped chicken and cook for about 5 minutes until golden and cooked through.
Add the peppers and cook for a further 2-3 minutes.
Add in the dry pasta, passata, sugar, onion granules, chicken stock and tomato purée.
Bring to a simmer and cover with a lid if you have one or tin foil, cooking for around 15-20 minutes (although this can vary depending on the pasta you use). Stir once or twice during cooking.
When the pasta is fully cooked, remove the lid and stir creme fraiche in along with the half the chorizo. Warm through for a couple of minutes over a low heat. Season with onion salt and pepper.
Optional step:
Preheat your grill. Serve your pasta, top with the remaining chorizo and sprinkle over some mozzarella or cheddar cheese. Place under the grill for a few minutes to melt the cheese and crisp up the chorizo.
Serve with garlic bread and enjoy!
