My easy one-pan version of the infamous pasta dish!
Even if you hate cooking, I think you'll like this recipe... it's so tasty, you only need one pan so it's minimal washing up, made in 30 minutes and uses mainly store-cupboard ingredients!
Note: Make sure most of the liquid is absorbed before adding the cream, chilli sauce etc. Some pastas absorb more or less liquid so cooking times can vary.

INGREDIENTS…
Serves 4
Veg oil spray
3-4 chicken fillets, in strips
250g mushrooms, sliced
2 peppers, sliced
1 red onion, sliced finely
1 tsp onion granules
1/2 tsp smoked sweet paprika
Black pepper
2 chicken stock pots dissolved in 750ml boiling water
300g dried penne pasta
200ml milk
6 tbsp sweet chilli sauce
1-2 tsp sriracha (add more if you prefer)
1/2 tsp chilli flakes
200g (about 6 heaped tbsp) reduced fat creme fraiche or 200ml double cream
INSTRUCTIONS…
Spray a large non-stick pan with veg oil. Add the chicken and cook for 2-3 minutes on each side over a medium-high heat until golden. Remove from the pan and set aside.
Add the onion, peppers and mushrooms and cook for 3-4 minutes. Add the chicken back into the pan.
Add the dried pasta, chicken stock, milk, paprika, onion granules and season with black pepper. Bring to the boil, then turn down the heat and simmer for
15-20 minutes until the pasta is cooked.
Add the sweet chilli sauce, sriracha, chilli flakes and creme fraiche/cream. Cook for a few minutes on a low heat until the sauce is thick and creamy. Serve and enjoy!
