JILL BAKES | One-Pan Chicken and Chorizo Rice




This is a really tasty and easy one-pan meal - minimum washing up, maximum flavour - I just love chorizo!

INGREDIENTS…

Serves 4


Spray veg oil

130g chorizo, diced

3 chicken fillets, in small chunks

1 onion, diced

1 pepper, sliced

1 punnet mushrooms, sliced

700ml semi skimmed milk

2 chicken stock pots/cubes dissolved in 400ml boiling water

1 tsp smoked sweet paprika

1 tsp onion granules

300g orzo

Juice of half a lemon

30g cheddar cheese

Salt and pepper, to taste



 

INSTRUCTIONS…


1. Spray a large saucepan with a small amount of veg oil. Fry the chorizo over a high heat for 1-2 minutes until the oils release. Add the onions and fry for a minute, then add the chicken and cook for 5-6 minutes.


2. Add the peppers, peas, onion granules, paprika and basmati rice and stir well to combine. Pour in the chicken stock and stir, then turn the heat down really low, add the lid and leave for about 15 minutes.


(The rice goes in dry and will cook in the stock. You can rinse the rice in a sieve under cold water for a couple of minutes before adding to remove some starch but is an optional step!)


3. Then turn the hob off but keep the lid on and leave for a further 10-12 minutes. After this, stir with a fork. The water should be absorbed. Season to taste and serve straight away.
