One-Pan Bacon Mac & Cheese with Crispy Stuffing Topping

A really tasty and family-friendly one-pan meal - minimal washing up and maximum flavour!

INGREDIENTS…

Serves 6


Spray veg oil

12 slices bacon, chopped

1 large onion, diced

500g dry macaroni

2 chicken stock pots dissolved in 700ml

boiling water

400ml milk

2 tsp onion granules

1 tbsp Dijon mustard

1 tbsp Worcestershire sauce

2 tsp smoked sweet paprika

Salt and black pepper

3 tbsp double cream or creme fraiche

300g cheddar cheese, grated

2 handfuls frozen peas

Half a bag of breadcrumb stuffing



INSTRUCTIONS…


Spray a large non-stick oven-safe saucepan (no plastic handle) with veg oil. Add the bacon and cook over a medium-high heat for 5-6 minutes. Add the diced onion and cook for a further 3-4 minutes.


Add the macaroni, chicken stock, milk, onion granules, mustard, Worcestershire sauce and paprika. Bring to the boil, then reduce to a simmer and cover with a lid.


Cook for 13-16 minutes (stirring halfway) until the pasta is cooked and the liquid is mostly absorbed. Add the peas for the last few minutes of cooking.


Meanwhile grate the cheese - it's best to grate your own rather than use pre-grated as it melts better.



Season the pasta with salt and pepper. Add the cream and most of the grated cheese bar one handful - stir through.


Preheat the oven to 190 degrees fan.


Sprinkle the remaining cheese and delicious stuffing breadcrumbs over the top of the pasta.


Cook for 10-15 minutes in the oven or you can brown under the grill instead.


Serve and enjoy! Any leftovers will keep for a few days and heat up well in the microwave.
