Jill Bakes | Mini Egg Cookie Dough Dessert

The perfect easy sharing dessert for Easter. This is an ultimate treat ready in less than half an hour!

INGREDIENTS…
Serves 8-10
250g plain flour
Pinch salt
1/2 tsp baking soda
175g unsalted butter, softened to room temp
150g light soft brown sugar
150g dark soft brown sugar
1 tsp vanilla extract
1 large egg plus 1 large egg yolk only
100g white chocolate chips
160g chocolate eggs, left whole
80g chocolate eggs, crushed
Ice cream, to serve

INSTRUCTIONS…
Sift the flour, salt and baking soda into a large bowl and set aside.
In another large bowl, mix together the butter, sugars, egg, egg yolk and vanilla with a hand mixer until combined.
Add the dry ingredients, choc chips and most of the chocolate eggs - leave a few aside to decorate at the end. Mix well with a spatula to form the cookie dough.
Preheat the oven to 175 degrees fan.
Press the cookie dough into a 22cm frying pan (or similar size oven-safe skillet).
Bake for 14-16 minutes - the dough will still be really soft. Leave for a couple of minutes to cool slightly, then serve with ice cream and extra chocolate mini eggs.
