
One of my favourite dinners, this mango chicken is both indulgent and totally delicious.
It is super easy to make and a great dish if you are entertaining dinner guests!

INGREDIENTS…
Serves 4-5
4 chicken fillets, in small chunks
1 onion, sliced
2 peppers, sliced
1 punnet mushrooms, sliced
1 large jar Sharwoods mango chutney (360g)
175ml double cream
1 heaped tbsp cornflour

INSTRUCTIONS…
Spray a large oven-safe saucepan with some veg oil over a medium-high heat. Add the chicken pieces and brown for a couple of minutes on each side.
Preheat the oven to 200 degrees fan.
Add the onions, peppers and mushrooms into the pan and cook for a further 1-2 minutes.
Meanwhile, in a medium bowl, mix the chutney, cream and cornflour together. Pour the sauce into the saucepan and mix everything together.
Cook in the oven for 45-55 minutes until the sauce has thickened and the chicken is fully cooked.
Serve with rice and crusty or garlic bread.
