This potato salad is nicer than any you can buy and is hassle-free to make! I use light mayo and some Greek yoghurt to make it a bit healthier than the full-fat version and still super tasty.
Perfect to compliment your next summer salad or BBQ!

INGREDIENTS...
Serves 6
1kg baby potatoes
3 heaped tbsp light mayonnaise
1 tbsp Greek yoghurt (full or low fat)
1 tbsp white wine vinegar
Few rashers bacon, cooked and chopped into small chunks
5-6 chives, sliced finely
Salt and black pepper
INSTRUCTIONS…
In a medium-large saucepan, cook the potatoes in boiling water for about 15-16 minutes until softened but not falling apart when you poke with a skewer.
Drain well and leave to cool for about 30-60 minutes.
Cook the bacon - I cooked in the airfryer for about
6-7 minutes. Leave to cool and chop into small pieces.
Chop the potatoes into small chunks and add back into the saucepan (I quartered most of mine).
Add the light mayo, Greek yoghurt, white wine vinegar, cooked bacon pieces and chives.
Season well with salt and black pepper.
Stir well to combine, taking care not to break the potatoes up too much.
Serve and enjoy - will keep in the fridge for a few
days!
