Honey Roast Carrots & Parsnips

Easy and delicious honey roasted carrots and

parsnips - a Christmas dinner essential!


You can prep these on Christmas Eve and have them just ready to roast on the big day.


Also my top tip is to transfer your cooked veg to a slow cooker on the low setting to keep them warm until you're ready to serve... I do this with these and my brussel sprouts!

INGREDIENTS…

Serves 8


2-3 tbsp rapeseed oil

7 large carrots, peeled and cut into long slices

6 parsnips, peeled and cut into long sticks

1 tbsp red wine vinegar

1/2 tsp dried rosemary

2 tbsp honey


INSTRUCTIONS…


Preheat oven to 200 degrees fan.


Add the carrots and parsnips into a large roasting tray.


Pour over the oil, vinegar and rosemary.


Stir and cook in the oven for 45-50 minutes.


Drizzle over the honey, stir and return to the oven for 5-10 minutes. Then enjoy!
