JILL BAKES | Easy Mini Egg Fudge




This the perfect easy Easter treat that will only take you 15 minutes to make!


You can use any Easter chocolate - your choice really if you’re not a fan of Mini Eggs, although who doesn’t love Mini Eggs!

Ingredients


360g white chocolate

60g unsalted butter, in small cubes

1 tsp vanilla extract

397g can condensed milk

100g icing sugar

Pinch salt

2 x 80g bags Mini Eggs

100g milk chocolate



Instructions

1. Line an 8x10 inch baking tray with tin foil. Grease with a small amount of butter. Bash the Mini Eggs with a rolling pin and set aside.


2. In a large microwave-safe bowl, add the white chocolate, butter and vanilla. Melt in the microwave for about 60-90 seconds stirring every 30 seconds until melted.


3. In a small microwave-safe bowl, melt the milk chocolate for 30-60 seconds, stirring halfway. Set aside.


4. Pour the condensed milk into the white choc mixture and stir until the mixture thickens. Sieve in the icing sugar and salt and mix well.


5. Add in most of the Mini Eggs leaving some aside to decorate. Stir to combine. Add most of the melted milk chocolate and gently swirl through - don't mix too much.


6. Pour into the lined tray and use a spatula to spread the mixture out evenly. Push the rest of the eggs into the top and drizzle over the remaining chocolate.


7. Chill in the fridge for 3-4 hours or overnight. Then cut into bite size pieces with a sharp knife. Keep in the fridge and eat within a week.
