Jill Bakes Easter | Mini Egg Cheesecake

The Easter countdown continues and this week it’s Mini Egg Cheesecake!


Mini Eggs have to be my favourite Easter chocolate and I think this is a great crowd-pleaser for an Easter dessert!

INGREDIENTS…

Serves 12-14


For the base:

380g chocolate Hob Nob biscuits

110g butter or spread, melted


For the cheesecake:

495g full fat cream cheese

250g icing sugar

250ml double cream

1 tsp vanilla extract

240g Mini Eggs, crushed

50g melted milk chocolate

To decorate:

1 chocolate flake, crushed

160g Mini Eggs



INSTRUCTIONS…


Crush the biscuits in a food bag with a rolling pin until fine crumbs.


In another large food bag, crush the mini eggs and set aside.


Melt the butter in a large saucepan and then pour in the biscuit crumbs. Stir well to combine. Transfer into an 8 or 9 inch springform tin and press down firmly with the back of a spoon or a potato masher. Set in the fridge.


Melt the chocolate in 30 second intervals in the microwave and set aside.



Cream together the cheese, vanilla and icing sugar in a large bowl with a hand whisk or in a stand mixer.


In another bowl lightly whip the cream with a mixer until it just holds its shape. Fold this gently into the cheese mixture. Take your time and it will go from lumpy to smooth!


Then add the crushed mini eggs and melted chocolate and combine - try not to overmix.


Pour onto the chilled biscuit base and spread out evenly.


Chill in the fridge for at least 4-5 hours but preferably overnight.


Remove the cheesecake from the tin onto a serving plate.


Add the crushed flake and mini eggs.
