
It’s only four weeks to Easter so over the next few weeks I’ll be sharing my favourite Easter bakes!
Starting off with these fudgey and delicious brownies topped with your favourite Easter chocolate… these are bound to go down well as an Easter treat!

INGREDIENTS…
Makes 12 big brownies
150g dark chocolate
50g milk chocolate
200g unsalted butter
3 large eggs
275g caster sugar
95g plain flour
30g cocoa powder
1 tsp vanilla extract
100g milk chocolate chips
4 creme eggs, halved Mix of chocolate eggs

INSTRUCTIONS…
Preheat oven to 160 degrees fan. Line a 9x9 inch baking tin with baking paper.
Melt together the butter, dark and milk chocolate in a heatproof bowl in the microwave for 1-2 minutes until melted.
Leave to the side to cool to room temperature.
Using your Kenwood Stand Mixer, whisk together the eggs and caster sugar for about 5 minutes until pale, mousse-like and doubled in volume.
Pour the cooled chocolate mix into the whisked eggs, add the vanilla extract and fold with a spatula. Co gently - you don't want to knock out the air.
Once combined, sift in the cocoa powder and plain flour and then fold together again gently.
Once combined, fold through the chocolate chips and pour into the prepared tin - bake in the oven for 20 minutes. Push the creme egg halves into the brownies and return to the oven for 6-8 minutes.
They should be done when they're not wobbling when you shake the tin, and a skewer should come out mostly clean, not covered in chocolate.
Remove from the oven and decorate with the chocolate eggs.
Leave to cool in the tin completely. Then put into the fridge overnight - this is the secret to making the fudgiest brownies!
Use a hot knife to cut the brownies for a nice clean cut. They will last in an airtight container for about 1 week but I doubt they'll last that long!
