INGREDIENTS…
Serves 10-12
300g milk chocolate digestive biscuits
120g unsalted butter, melted
397g tin Carnation Caramel
300g strawberries, topped and halved
500ml double cream
1 heaped tbsp icing sugar
1 tsp vanilla extract
2 chocolate flakes, crushed
INSTRUCTIONS…
Crush the biscuits in a plastic food bag with a rolling pin until fine. Add the melted butter and mix well.
Grease an 8 inch loose bottom tin with a small amount of butter. Transfer the crumbs into the tin and press well using a glass or potato masher. Chill in the fridge while you prepare the strawberries and make the filling.
Spread 2 tbsp of the tinned caramel evenly over the base. Place strawberries around the sides of the tin and over the base.
In a large bowl, whip the cream with the icing sugar and vanilla until it starts to thicken just a little. Add the remaining tinned caramel and whip until firm enough to hold its shape - be careful not to over whip or the cream will split.
Spread the caramel cream over the strawberries and biscuit base. Chill in the fridge for a few hours to set.
Just before serving, sprinkle chocolate flake over the top. I used a heart template for a nice valentines theme but totally optional!
Will keep for about 2 days in the fridge.
