Creamy Bacon and Leek Pasta

You won’t be disappointed with this one - I think this might be the tastiest pasta dish I’ve ever made. Add to that, this can be made in only half an hour, it makes it an obvious winner!

INGREDIENTS…


Pasta - whichever kind you prefer!

Veg oil spray

1 packet lean diced smoked bacon or bacon medallions

2 leeks, washed and sliced

1 punnet mushrooms, sliced

1 chicken stock cube dissolved in 150ml pasta water plus 4 tbsp pasta water

1 tsp onion granules

2 tsp dried chives

125ml double cream (you could use reduced fat creme fraiche if you prefer)

60g 30% reduced fat cheddar cheese plus extra to serve

Onion salt and pepper to taste



INSTRUCTIONS…


Spray a large non-stick pan with a few squirts of veg oil. Fry the bacon for about 5-7 minutes until brown and crispy. Set aside.


Prepare the leeks and mushrooms by washing well and slicing.


Cook the pasta as per the packet instructions.


Fry the mushrooms and leeks for 5-7 minutes until softened. Add the bacon back in along with the onion granules.


Make up the chicken stock and add to the pan along with the double cream and the dried chives.


Then add in the pasta water and grated cheese and stir. Season with onion salt and pepper.


Add the cooked pasta into the sauce and combine. Serve and enjoy!
