JILL BAKES | Christmas Mince Pies


An absolute classic… and Santa’s favourite!


These are a really simple and yummy version! You can use shop bought pastry as an easy cheat but it really is worth the wee bit of extra effort to make your own.


Note: the size of your cutters and muffin/bun tins may vary the exact number of pies you make. You can also use a mini muffin tin to make mini versions which are my absolute favourite!

INGREDIENTS…

Makes 12


190g plain flour

125g butter, softened

60g caster sugar plus extra for sprinkling

1 medium egg

Or 1 ready rolled sheet of sweet shortcrust pastry

1 400g jar mincemeat

zest of 1 large orange

1 green apple, peeled and finely diced

Icing sugar, to serve



INSTRUCTIONS…


Preheat the oven to 190 degrees fan. Lightly grease a 12-hole muffin tin with butter.


Make the pastry by rubbing together the flour and butter until it looks like breadcrumbs. Add in the sugar and egg with a splash of cold water until it just forms a dough. Do not over work.


Wrap in cling film and chill in the fridge for 10 minutes while you make the filling.


Put the mincemeat in a medium bowl, grate in the orange zest and add the chopped apple pieces. Stir well.


Roll out the pastry to about 2-3mm thick on a floured surface.


Using a round pastry cutter, cut out twelve 8-9cm discs of pastry. Press the pastry into the muffin cups


Put about 2 tsp of mincemeat mixture into each pastry case- about 3/4 full.
