It’s definitely soup season! This one is so tasty, made in about half an hour, and is perfect for batch cooking and freezing for a handy lunch to take to work.

INGREDIENTS…
Serves 6-8
Spray oil
200g chorizo, peeled and chopped
2 onions, diced
750g sweet potatoes, cut into small cubes (I used pre-chopped frozen chunks)
3 chicken stock pots dissolved in 1.2 litre
boiling water
400g can chopped tomatoes
175g red lentils
1 tsp smoked sweet paprika
1 tsp sugar
1 tsp onion granules/powder
1/2 tsp chilli flakes (optional)
2 tbsp reduced fat creme fraiche or 100ml
double cream
Salt and pepper
INSTRUCTIONS…
Spray a large saucepan with oil over a medium-high heat. Add the onion and chorizo and cook for about 5 minutes until browned.
Then add the chopped sweet potato and cook for a further 2-3 minutes.
Add the chicken stock, chopped tomatoes, lentils, paprika, sugar, onion granules and chilli flakes. Bring to the boil, then reduce the heat and simmer for around 20 minutes until the lentils are soft.
Blend with a hand blender until smooth. Add the creme fraiche/double cream. If too thick at this point, add a splash more boiling water.
Season well with black pepper and salt to taste. Then serve and enjoy!
