JILL BAKES | Chinese Chicken Fakeaway



This is a super tasty 30 minute meal - healthier than a takeaway and so yummy!


There are quite a lot of ingredients in this one but hopefully most of them are already in your cupboard.

INGREDIENTS…

Serves 3


• To marinade the chicken:

3 chicken fillets, in small chunks

1 tbsp light soy sauce

2 tsp baking soda

1 tsp cornflour

Salt and pepper



• For the sauce:

4 tbsp light soy sauce

2 tbsp balsamic vinegar

1 tbsp rice wine vinegar

1 tbsp dark soy sauce

1/2 tbsp hoisin sauce

4 tsp sugar/sweetener

1 tsp cornflour

1 tsp onion granules

8-10 tbsp boiling water

Pinch chilli flakes (optional)

Spray veg oil

1 tbsp ginger puree

1 chilli, finely sliced (optional)

2 peppers, sliced

1 carrot, cut into fine pieces

1/2 punnet mushrooms, sliced

3-4 spring onions, sliced

Handful roasted peanuts (optional)



INSTRUCTIONS…


Add the chicken and marinade ingredients into a medium bowl. Mix well and marinate for 10-60 mins in the fridge.


In another bowl mix the sauce ingredients together until the sugar dissolves, then set aside.


Spray a large non-stick pan with veg oil over a medium-high heat. Add the marinated chicken and fry for 3-4 minutes on each side until golden brown and cooked through. Transfer onto a plate and set aside.


Spray the pan with more oil. Add the ginger and chopped chilli (if adding) and cook for 1 minute. Then add the peppers, carrot and mushrooms and cook for 3-4 minutes.


Pour the sauce into the pan and bring it to a boil while stirring. Once it starts to thicken, add the chicken back in and mix well cooking for about 2 minutes.


Stir in the spring onions and peanuts, if adding. Cook for a further 2 minutes to warm through.


Serve with boiled rice and/or chips!
