JILL BAKES | Chicken Tikka Skewers

A perfect recipe for a BBQ, or you can use your airfryer or oven. So delicious!

INGREDIENTS…

Serves 4


4 chicken fillets, cut into cubes

4 tbsp Greek yoghurt

1 tbsp chicken tikka paste

Juice of 1/2 a lemon

1 tsp puréed ginger paste or fresh ginger

Salt and black pepper

2 peppers, cut into large chunks

1 red onion, cut into chunks



Chicken Tikka Skewers

INSTRUCTIONS…


Soak 4 wooden skewers in cold water for a few minutes.


Mix the yoghurt, tikka paste, lemon juice, ginger paste, salt and pepper in a medium bowl. Add the cubes of chicken, mix well, cover with cling film and marinade in the fridge for at least 30 minutes or up to overnight.


Prep the veg.


Thread the marinated chicken, peppers and onions onto the skewers alternating between each.



Cook at 180 degrees in your oven or airfryer.


Cooking times will vary... approximately 17 minutes in the airfryer or 20 minutes in the oven. Turn the skewers halfway. Check the chicken is fully cooked.


Enjoy with salad!


Any leftovers make a really tasty lunch.
