Super tasty, quick and just as good as a takeaway for a fraction of the price and calories!

INGREDIENTS…
Serves 3-4
320g battered chicken strips
Vegetable oil spray
250g mushrooms, sliced
2 peppers, sliced
4-5 spring onions, chopped finely Small tin of pineapple chunks 4 tbsp honey
4-5 tbsp sweet chilli sauce
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp tomato ketchup
Splash of juice from the tinned pineapple (if needed)
1 tsp cornflour dissolved in 1 tsp cold water (if needed)
Rice or noodles to serve
INSTRUCTIONS…
Cook the chicken strips as per the packet instructions. I used my airfryer.
Meanwhile spray a large non-stick pan with veg oil. Add the peppers and mushrooms and cook for 4-5 minutes.
Then add the pineapple chunks and spring onions.
Add all the sauces and simmer for a few minutes until it starts to thicken slightly - it should coat the back of a spoon.
If your sauce is too runny, add the cornflour paste. If it's too thick, add a splash of the pineapple juice.
Add the cooked chicken, stir well to coat in the sauce. Serve with rice or noodles and enjoy!
