Jill Bakes | Best Ever Chocolate Guinness Cupcakes with Baileys Icing

The perfect bake for St Patrick’s Day! These are so delicious and simple to make - you have to try them.

INGREDIENTS…

Makes 12


For the cupcake:


125ml Guinness

125g unsalted butter

50g cocoa powder

150g caster sugar

50g light brown sugar

75g sour cream

2 large eggs

2 tsp vanilla extract

140g plain flour

Pinch of salt

1 heaped tsp bicarbonate of soda



For the icing:

150g cream cheese

100g icing sugar

1 heaped tsp cornflour

75ml double cream

1-2 tbsp Baileys (optional)

INSTRUCTIONS…


Preheat the oven to 160°C Fan. Set 12 muffin cases into a muffin tray.


Pour the Guinness into a large saucepan and add the butter. Heat until the butter is melted, then whisk in the cocoa and sugars with a balloon whisk.


In another bowl, whisk the sour cream with the eggs and vanilla by hand and then pour into the pan. Next sieve in the flour, salt and bicarb and whisk to combine.


Pour into each muffin case and bake for 17-20 mins until a skewer comes out clean. Leave to cool completely on the tray, then transfer to a cooling rack.



Whip the cream cheese for about a minute with a hand mixer until smooth, Sieve in the icing sugar and cornflour. Mix with the hand mixer.


Whip the double cream in a separate bowl until holding soft peaks and then fold into the cream cheese mixture gently. Add the Baileys and fold -» through.


Spread or pipe the icing over the top of each cupcake and serve. Will keep for 1-2 days in the fridge.
