Jill Bakes with BBQ Pulled Chicken Nachos

I made this recipe at a recent demo event and it went down a treat, so thought I would share it for you to enjoy!

INGREDIENTS…


BBQ Pulled Chicken

Serves 6


5 chicken breasts

400g BBQ sauce

1 tsp paprika

1 onion, grated

1 tsp onion granules

Black pepper

2 tbsp light brown sugar or sweetener

1 tbsp balsamic vinegar

1/2 tbsp olive oil

Brioche baps, to serve Salad, to serve



BBQ Pulled Chicken Nachos

Serves 6


1 large bag tortilla chips

BBQ pulled chicken (you'll need about half of the full recipe)

1/2 bag (125g) grated mozzarella

A few spoonfuls of sour cream

1-2 spring onions, chopped finely

INSTRUCTIONS…


BBQ Pulled Chicken


• Put all the sauce ingredients into the slow cooker and mix together.


• Add the chicken fillets and coat in the sauce.


• Turn the slow cooker on low for 5-7 hours or high for 3-4 hours. When the chicken is cooked, there will be no pink inside and it will just fall apart when you lift it out.


• Lift out the chicken onto a plate and shred using two forks. Add it back into the sauce. You can keep it warm on the low setting until you toast your baps. Serve and enjoy!


BBQ Pulled Chicken Nachos


• Preheat oven to 180 degrees fan.


• Place half the tortilla chips into the bottom of a medium/large casserole dish.


• Sprinkle over half the chicken mixture (above) and cheese.


• Repeat and place in the oven for 15-20 minutes until the cheese is melted and the chicken is hot.


• Dollop over a few spoonfuls of the sour cream and scatter over the spring onions. Serve and enjoy!
