Another of my go-to meals for when I’m in a hurry…perfect for a quick lunch, post-gym evenings or when you’re late home from work!


Approx 715 calories and 53g protein - I don’t always track my macros/nutrition but trying to at the moment!

INGREDIENTS…

Serves 1


1 soda bread farl

3-4 tbsp bbq sauce (I use Crucials)

1 tsp onion granules

Pinch of mixed herbs (optional)

1 cooked chicken fillet, shredded or

100g pre-cooked chicken

30g grated mozzarella or reduced fat cheddar

2 heaped tbsp tinned sweetcorn

1/2 red pepper, diced Mixed leaves, to serve



INSTRUCTIONS…


Cut the soda farl in half and toast for a couple of minutes until starting to turn golden.


In a small bowl, mix the cooked chicken with enough BBQ sauce to coat the chicken well, the onion granules and mixed herbs.


Line the airfryer with a sheet of baking paper for minimal washing up and set the farls on.


Spread half the BBQ chicken mix on a soda farl half and repeat for the other.


Add the toppings and cheese.


Cook in the air fryer at 180 degrees for about

10-15 minutes until the cheese is melted and the chicken is piping hot. You could also use the grill if you prefer.


Serve and enjoy!
