Cheesecake is always a firm favourite in my family and this chocolate orange one is so light and delicious!
This will keep for a few days in the fridge once made.
If you're making this for Christmas Day dessert, you can make this a couple of days in advance on the 23rd and it will keep!
You can also freeze and leftovers.

INGREDIENTS…
Serves 12
For the base:
300g dark chocolate digestives
90g plain digestives
150g butter
For the cheesecake topping:
495g full fat cream cheese (3x165g tubs)
300ml Dale Farm Whipping Cream
75g icing sugar
2 Terry's chocolate oranges
To decorate:
200ml Whipping Cream
2 tbsp icing sugar
1 Terry's chocolate orange: you'll need 8-10 segments to decorate, 4 segments to melt and drizzle and there are a few left for you to eat!
Orange sprinkles (optional)
INSTRUCTIONS…
Crush the biscuits in a food bag with a rolling pin until really fine crumbs. Melt the butter in a large saucepan and then pour in the biscuit crumbs. Stir well to combine.
Transfer into the tin and press down firmly with the back of a spoon or a potato masher. Place in the fridge.
Melt the chocolate oranges in a microwave-safe bowl in the microwave in 30 second intervals until full melted stirring well each time - when melted, set aside and leave to cool.
Add the cream cheese, icing sugar and vanilla into a large bowl and mix using a hand mixer together until smooth.
In a separate bowl, whip the cream until fairly thick.
Add into the cream cheese bowl and fold through with a spatula.
Pour in the cooled melted chocolate orange, and mix briefly with the mixer to combine.
Spoon the filling on top of the biscuit base, smooth out the top and chill in the fridge for at least 5-6 hours, or preferably overnight.
Once set, it's time to decorate. Drizzle over the melted chocolate orange using a teaspoon.
Whip the rest of the cream together with the icing sugar and then pipe on in swirls! I used a 2D closed star piping.
Set some chocolate orange segments on the cream swirls and sprinkle over the orange sprinkles. Serve and enjoy.
