If truffle and Parmesan fries are on a menu when I’m out I will 100% order them, so here is my version which is a bit healthier using the airfryer!
I’m by no means an airfryer expert but these are definitely my favourite thing I’ve made yet. You could absolutely make these in the oven too if you don’t have an Airfryer... they are the perfect side for so many dishes.

County Antrim Foodie and Instagrammer
INGREDIENTS…
Serves 4
1kg baby potatoes
1 tbsp vegetable oil
1/2 tsp dried rosemary
1 tsp onion granules
Salt and pepper
2 tbsp grated Parmesan cheese
Truffle Mayo to serve
INSTRUCTIONS…
Wash and cut the potatoes into small cubes.
Place in a large bowl.
Soak for 30 minutes in cold water if you have time to remove some of the starch.
Coat in the oil, rosemary, onion granules, salt and pepper.
Throw into your airfryer. Cook for 15 minutes at 200 degrees, shake and cook for a further 10-15 minutes until golden and crispy.
You could also just cook them on an oven tray instead of airfrying - they'll just take longer!
Remove from the airfryer into a large serving bowl, add 2 tbsp of grated Parmesan cheese and toss well.
Drizzle over plenty of truffle mayo and a bit more Parmesan if you like!
