Airfryer Stuffed Chicken Breasts

This is one of my favourite dinners….the chicken is so moist, the stuffing so tasty and the bacon so crispy!


I like to use the pork stuffing loaf for this recipe as I find the texture easier to stuff the chicken with it but you could use any tasty stuffings.


For an easy midweek meal with minimal washing up, I usually throw some halved baby potatoes and some veg like broccoli, cherry tomatoes, onion & peppers into the airfryer for the last 15 minutes of cooking!


These also make a really nice change of a Sunday roast!

INGREDIENTS…

Makes 4


4 large chicken breasts

4 slices (about 1cm thick) of Pork Stuffing Loaf

4 slices streaky bacon


INSTRUCTIONS…


Cut a slit along the side of each chicken breast to create a pocket - take care not to slice the whole way through.


Place a slice of stuffing inside each chicken breast.

Wrap each chicken breast with the bacon.


Airfry for 20-21 minutes at 190 degrees (turning halfway through cooking) or cook in the oven at 180 degrees for about 33-35 minutes until the chicken is cooked.


Cook the remaining stuffing as per packet instructions to enjoy alongside.
