Super quick and easy to make - this is my favourite fish recipe and one I make regularly when I need something healthy in a hurry! Salmon is a great source of protein and good fats so this is a nice healthy meal for the whole family to enjoy.
Cooking it in foil means your kitchen doesn’t smell of fish for days!

INGREDIENTS…
Serves 2
Veg oil spray
2 salmon fillets
2 peppers, in large chunks
12 cherry or baby plum tomatoes
1 onion, chopped into large chunks
2 tbsp honey
2 tbsp sweet chilli sauce
2 tbsp soy sauce
1-2 packets microwave golden veg or spicy rice
INSTRUCTIONS…
Spray a piece of tin foil with a few sprays of veg oil.
Place your salmon in the middle of the foil and add the honey, soy and sweet chilli sauce.
Wrap up into a parcel, making sure there is space around the fish and the foil isn't touching the fish and set into the airfryer.
Add the peppers, tomatoes and onion into the basket beside the fish.
Cook the fish in your airfryer for about 12-15 minutes at 200 degrees (you could also oven bake for about 25 minutes).
Just before the end of cooking, microwave the rice as per packet instructions.
Serve and enjoy!
